Ingredients

  • 16 oz pork belly
  • 2 jalapeno chiles sliced
  • 4 TBLS cilantro chopped
  • 4 TBL hard-cooked egg chopped (2 each)
  • 2 oz Vietnamese Caramel (recipe follows)

Vietnamese Caramel

  • 1 cup sugar
  • 1/2 cup water
  • 1/4 cup fish sauce
  • 1/4 cup lime juice
  • 1/4 cup water

Method

Vietnamese Caramel:
  1. Combine ingredients
  2. Reduce until syrupy
Belly Burgers:
  1. Remove skin from belly and clean
  2. Pulse in a food processor to six times
  3. On a flat top cook burgers until 145 degrees F
  4. Warm buns on griddle


Assemble Burgers:
  1. Spread Vietnamese Caramel on the insides of the both buns
  2. Place the belly burgers on top of bottom bun, top with jalapeño, cilantro and egg, cover with bun
