Ale-Marinated Pork London Broil with Crispy Sage Mashed Potatoes


  • 1 5-pound Pork Inside Muscle


  • 3 cups English style ale
  • 6 oz wt honey
  • 1/4 cup onion minced
  • 1/4 cup celery chopped
  • 1/4 cup carrot minced
  • 1 TBL garlic chopped
  • To taste, salt & black pepper
  • 1 oz wt butter unsalted

  • 3 pounds mashed potatoes
  • 24 each sage leaves French-fried


  1. Clean inside muscle
  2. Combine all marinade ingredients in plastic container
  3. Add pork and marinate overnight. Remove pork the next day, reserving marinade
  4. Char-grill to specification

For sauce:

  1. Place reserved marinade in heavy saucepan
  2. Reduce to glaze consistency
  3. Whisk in butter to enrich sauce 

Combine mashed potatoes and sage leaves until blended 

Slice pork thinly against the grain and serve with ale sauce.


Serving Suggestion:

Serve pork with green beans and sage mashed potatoes. Garnish with additional sage leaves
