Our friend Chef Elias Cairo of Olympia Provisions in Portland, OR (formerly Olympic Provisions) recently launched the Olympia Provisions cookbook.

 

In the book, Chef Cairo takes a deep dive into American charcuterie, offering step-by-step recipes for confits, pâtés, sausages, salumi, frankfurters, and more. The book also goes beyond recipes, featuring an unexpected but inspiring story of Chef Cairo’s travels in the Alps (and discovery of that region’s unique charcuterie), essays about the perfect wine lunch, and non-charcuterie recipes from Olympia Provisions’ two restaurants.
