ACF Culinary Team USA
The American Culinary Federation (ACF) National Team recently competed in the 24th Internationale Kochkunst Ausstellung (IKA) International Culinary Exhibition, commonly known as the “culinary Olympics,” Oct. 22-25, in Erfurt, Germany. The team of eight chefs from across the US competed in four competitions and brought home a gold medal!
Their winning dish was the Autumn Mangalitsa Pork Loin – thyme-basted loin with country sausage, braised shank and white bean fritter, foraged mushroom ragout, red cabbage, parsnip, cipollini onion tarte tatin, and Madeira jus lie.
