Mexican Haystacks

Ingredients

  • 7 1/2 pounds lean ground pork
  • 4 cups tomato paste
  • 1 1/2 quarts water
  • 2 TBL onion chopped
  • 1 #10 can pinto beans OR chili beans
  • 1/8 cup chili powder
  • 1/2 teaspoon black pepper
  • 1 TBL cumin
  • 3 1-pound bag corn chips
  • 6 pounds Cheddar cheese shredded

Method

  1. Brown fresh pork and drain off grease.
  2. Add the tomato paste, water, onions, beans and seasonings to boil.
  3. Simmer 20 minutes.
  4. Serve 1/4 cup mixture over 1.25 oz. Corn chips and top with 2 oz. Shredded cheddar cheese.
