Ham Tetrazzini

Ingredients

  • 6 pounds lean ham cooked and cut into julienne strips
  • 1/2 cup olive oil or vegetable oil
  • 1/2 cup butter
  • 2 heads garlic minced
  • 2 quarts mushrooms sliced
  • 4 26-oz cans cream of chicken soup reduced fat, reduced sodium
  • 1 1/2 quarts half & half
  • 3 cups Parmesan cheese grated
  • 2 1/2 pounds whole wheat linguine OR spaghetti

Method

  1. Heat ham in oil.
  2. Sauté garlic and mushrooms in butter.
  3. Stir in cream of chicken, half & half, and Parmesan cheese.
  4. Stir in ham mixture.
  5. Serve over cooked noodles.
